Feel like you’re in a slump and can’t get out of it no matter what you do? Me too, sister. Whether you’re stuck doom scrolling through socials or just realllyyy don’t want to start work, these 6 ingredient energy bars are packed with caffeine and slow-burning carbs to help get your butt moving!

Now I am going to write a disclaimer before you continue to read on. You will only like this recipe if you LOVE (and I mean love) the taste of coffee. It is totally safe to eat coffee beans, but they do have a strong coffee taste and if you’re the type of person to drown your cup of joe in a bunch of cream and sugar, you may need to hold off on this recipe.

Caffeine Content

If you cut your 8×8 inch pan of bars into 16 pieces, each bar should have almost as much caffeine as a cup of coffee. There are approximately 6 milligrams of caffeine in a roasted coffee bean and a cup of coffee typically contains about 95 milligrams of caffeine. There is only 1/4 cup of roasted coffee beans in this recipe, so divided amongst the entire pan, you won’t completely be bouncing off the walls.

Healthy for You??

Obviously coffee beans are packed with caffeine. However, coffee beans are also surprisingly packed with antioxidants and fibre! Combined with the shredded coconut and soft dates, these bars are full of nutrients and will make a satisfying snack for any coffee lover.

Should I Grind my Coffee Beans?

This recipe is great because you only need to measure out the ingredients, dump them into a food processor and process everything until it turns into a dough. However, the coffee beans won’t be finely ground and will leave your bars with a nice little crunch.

If crunching on coffee beans isn’t your jam, you can 100% use ground coffee instead, or even process the coffee beans to a finer grain before adding in the rest of the ingredients.

Get Your A** Up Energy Bars

Get up and moving with these nutrient rich, 6 ingredient energy bars. All you need to do is put everything into a food processor and blend away!

Servings 16 bars

Ingredients

  • 2 cups rolled oats
  • 2 cups soft dates pitted
  • 1/4 cup roasted coffee beans ground or full
  • 1/2 cup shredded coconut
  • 1 tbsp vanilla
  • 1/4 tsp salt

Instructions

  • Place everything into a food processor and blend together until a dough forms (about a minute or so). If the dough is a bit dry, add 1 tbsp of water until it comes together.
  • Line an 8×8 inch square pan with parchment paper and using damp hands, press the dough flat into the pan. Refrigerate for 1 hour or until firm.
  • Once firm, cut the square into 16 bars. Store in the fridge and enjoy!

Notes

  • If crunching on coffee beans isn’t your jam, you can use ground coffee instead, or even process the coffee beans to a finer grain before adding in the rest of the ingredients.
  • Will keep in the fridge for about a week
